How to Make Palabok Sauce

Pancit Palabok is another popular and favorite pancit or noodle dish among Filipinos. It is made of rice noodles with thick yellow-orange sauce, and various toppings like shrimps, flakes of smoked fish, pork chicharon, hard-boiled eggs, spring onions, squid rings, fried garlic, among other things.



  • ½ kilo of Palabok Noodles
  • ½ cup Atsuete with water
  • ¼ kilo of Ground pork
  • 3 pcs. Tinapa
  • 4 cloves of Garlic
  • 2 pcs. White Onion
  • 1 tbsp. Sugar, 1 tsp. Pepper and Salt
  • 1 tbsp. Fish sauce
  • 1 pc. Knorr Cubes
  • 2 pcs. beaten Eggs
  • 1 cup of Slurry(1/4 cup of cornstarch and 1 cup of water)
  • 4 cups of Water
  • Oil for sauté
  • 4 pcs. Eggs For toppings
  • Shrimp for toppings
  • Squid for toppings
  • Chicharron for toppings
  • Fried Garlic
  • Spring onions


  1. Pre-heated pan with oil sauté the garlic and onions.
  2. Add the ground pork and stir. Then add the salt, pepper and sugar.
  3. When the ground pork is golden brown add the tinapa and stir.
  4. Add the 4 cups of water and stir until to boil.
  5. Add the knorr cubes and fish sauce then contentious stir.
  6. Add the sauté sauce gradually until you achieve what color do you want of the sauce.
  7. Add the beaten eggs and stir well.
  8. Add gradually the slurry until get the perfect thickness of the sauce.
  9. Continue stir until creamy and saucy sauce. Set aside.
  10. Saute the seafoods toppings and set aside.
  11. Boil the palabok noodles until soft and cook. Drain and cool.
  12. Mix the palabok sauce and noodles and arrange the all toppings.
  13. Serve with calamansi.
